This week Natalie helped me make some lamb kabobs using this amazing lamb kabob recipe that I found thru the American Lamb Board. Kabobs are a wonderful dish to involve young kids in the kitchen. She practiced valuable skills in knife safety and cutting the veggies. I love kabobs because they are a great, hands on way to create and practice patterns in everyday life. We picked 'meat, onion, red pepper, orange pepper' and repeated 3x on as many skewers as we could.

These kabobs turned out so tender and flavorful. We absolutely loved these and they have been requested to be a birthday meal! The recipe is below. You can purchase our lamb kabob meat in our Lamb BBQ Pack which is available for pre-order and pick up at the Greeley Farmers Market.

Ingredients  x

  • 1.5-2 lbs lamb kabob meat (you can use stew meat or cut a roast into cubes)- I have no doubt this would be delicious with steak as well

  • 1 yellow bell pepper chopped

  • 1 red bell pepper chopped

  • 1 red onion quartered

MARINADE

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons soy sauce

  • 1 1/2 tablespoons Worcestershire sauce

  • 2 tablespoons Olive oil

  • 1 teaspoon Italian seasoning (We used 1/2 tsp parsley, 1/4 tsp basil, 1/4 tsp oregano)

  • 3/4-1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

Instructions

  • Whisk together the marinade ingredients.

  • Place the kabob meat in a shallow bowl.

  • Pour the marinade over it, cover tightly, and refrigerate for at least 10 minutes or up to 4 hours- ours marinated for about 1 hour.

  • Preheat the grill to medium-high heat.

  • While the meat is marinating and the grill is pre-heating cut peppers and onions into about 1" squares.

  • Discard the marinade. Thread the lamb and vegetables onto eight skewers.

  • Place the lamb kabobs onto the hot grill and grill for 3-4 minutes on each side and turn regularly to ensure even cooking.
